Peanut Butter Cookies

These classic cookies are quick, easy, and delicious!

Ingredients:

  • 3 Cups Acadian Light Buckwheat Flour
  • 2 Tsp Baking Powder
  • 1 Tsp Salt
  • 1 Cup (2 Sticks) Unsalted Butter, Softened
  • 1 Cup Creamy or Chunky Peanut Butter
  • 2 Tsp Vanilla
  • 1 Cup Packed Brown Sugar
  • 1 Cup White Sugar
  • 2 Large Eggs

Directions:

Preheat oven to 350 degrees. Combine buckwheat flour, baking powder and salt. In a large bowl, beat butter, peanut butter, and vanilla until well blended. Add both sugars and meat. Combine half the ingredients, add the eggs one at a time, beat in the remaining dry ingredients. Roll cookies into 1 1/2 inch balls and set 2 1/2 inches apart on a greased cookie sheet. Press tops with the back of a fork. Bake approximately 15 minutes or until lightly brown. Makes three dozen.
